Job Title:  Skilled Retail Butcher  

 

Rate of Pay: Competitive

 

Hours of Work: Approx 36.5 hours per week with flexibility to meet business demands (Mon – Sat)

 

Working Environment: Alex Mitchell Butchers is a very busy and prestigious retail and online butcher business with customers throughout the UK. The working environment is fast paced both in the shop and production unit in order to meet customers’ needs and deadlines.

 

Since customers are paramount to the success of our business, good service, quality products and highly skilled workmanship are key to gaining and retaining our customers. 

 

You will be required as deemed necessary to work from our Production Unit as well as our shop(s).   

Part of your job may involve driving our company van. 

 

Main Responsibilities

 

Butchery tasks

 

• This includes efficient boning, trimming, mixing, mincing, cutting, chopping, rolling / tying roasts, and slicing.  In addition, you may also manufacture a range of meat-based products such as sausages, burgers, puddings, steak pies and cooked meats. (This is not an exhaustive list) 

• You will be required to use appropriate equipment / machinery correctly including safety equipment

• Maintain Health and Safety Standards
• You will be required to follow Alex Mitchell Butchers’ recipes to ensure consistency of products and to maintain quality standards within the required timescales

• Correct stock rotation

• You will be displaying products in the appropriate trays in the cabinets, remembering that each day of the week has its own business trend

• To receive, inspect and store meat upon delivery and check against original order

• To record quantity of goods received and check against original order

• To carry out all tasks as trained on-the-job to meet and maintain the well recognised Alex Mitchell Butchers standards

• In addition to the contents of this role description, you are expected to undertake any and all other reasonable and related tasks allocated by line management 

 

Customer service

 

• When serving you must adhere to the Alex Mitchell Butchers induction training

 

Cleaning Tasks

 

• As part of the staff team, you will play a key part in the cleaning of the shop / production unit.  Each day (Monday to Saturday) has its’ own demands of cleaning as per in-house policies and procedures and you will be expected to maintain the highest standards of cleanliness both within our business as well as maintaining the highest level of personal hygiene

 

Income / Sales

 

• Maximise business income through efficient butchery (performance), production levels, appropriate stock levels, resources and customer service noting that each day of the week has its own business trend

• Maintain a high level of commercial awareness and cost awareness

 

Premises 

 

• Ensure all machines and equipment must be kept in good repair and handled with care at all times.  Report any required maintenance to the line manager 
• Ensure all business premises are clean and tidy at all times  (clean as you go policy)
• Ensure that every product has a ticket / label, the cabinets are displayed in an attractive and presentable manner at all times 
• Ensure that all personal and food hygiene policies and procedures are being adhered to all times

 

Stock

 

• Accept, sort, price and display stock in accordance with Alex Mitchell Butchers guidelines

 

Confidentiality

 

• Maintain absolute confidentiality with regard to all company information

 

Other responsibilities

 

• Undertake any other appropriate duties required to achieve performance 
• Attend and participate in company training / meetings as and when required.

 

Experience – Essential

 

• Previous experience gained in a retail butcher shop environment
• Demonstrate commitment to customer services and service delivery
• Ability to understand and interpret business trends

 

Knowledge & Skills – Essential

 

• Ability to recognise stock potential in order to generate income
• Food Hygiene certified
• Ability to work as part of an effective team and self motivate
• Ability to plan, co-ordinate daily production for the daily business needs to be met
• Ability to generate new product ideas and recipes
• Basic arithmetic
• A reasonable level of physical stamina 
• Work under pressure and meet deadlines

 

Additional Circumstances

 

• Flexible approach to work required.  Occasional requirement to work additional hours / days to cover holidays, sickness or participate in outside of normal shop hours to prepare for a special time of year
• Processing stock deliveries will regularly involve carrying and moving.  You must follow the manual handling procedure.  You will also be on your feet for long periods of time.
